Forget it. Undertale should be a standalone. The only connection it might have is the EarthBound universe, and it should stay like this.

Jurassic World was a licensed theme. Nexo Knights is an original theme, the characters are not evolved enough (compared to the Ninjago or Chima or The Lego Movie characters). So it wouldn't be a good idea to add it this soon.
Angy Birds might work, but I don't know about the licenses, same with Minecraft, I guess.

Despite my favoritism towards the Duckburg universe, I think the characters who would have benefitted from getting a minifigure instead of Buzz or the LGM are either Lilo or Leroy, because it seems weird to have Stitch as the only minifig from his franchise; most the others have either a partner or an enemy. Maleficent is also kinda alone, but the Fantasmic live show and the Kingdom Hearts RPGs have developed her into more of an universal Disney villain than just the one from Sleeping Beauty.
Leroy is not really a common Lilo & Stitch character. He was especially created for Leroy and Stitch. So we can probably expect Lilo and Nani in the next minifigure line, since Nani is more important.
Nexo Knights is far too new, to get into the game. It would take a year until everyone gets into it. Minecraft is very likely, due being a multi-console game, but I'm not sure about the rights, though. I would love to have TMNT in Lego Dimensions, but the licenses aren't currently available, since Lego selled it one year ago.

Bionicle could work too, they could make new molds for the head pieces and use the same type of body as the Hero Factory figs.
But Hero Factory actually is more relevant. The new Bionicle isn't bad, but it doesn't reach the old one.

Well, technically MetalBeard would be pretty hard to include, since he is actually a kidnapped character. (Yes, I know Robin is it too, but there are three versions of Robin) But you could also fight WW, Joker or Bane as themselves, so I guess that might be a good idea.

There Core Transfer Switches in new or upgraded levels, were Wheatley can be attached to, so that he can activate functions or control several parts of a computer system, so the ability is pretty much a fusion of hacking and mind control :)
